Humans have been fermenting foods for the last 12,000 years! Only recently have modern peoples turned away from preparing and eating a wide variety of fermented foods, turning over their food choices and preparation to big corporations, for which it is neither convenient nor profitable to produce live-culture foods. Your great grandparents fermented foods and stored them in the root cellar. Now, most of us are not even aware of that part of our culture (pun intended) having been lost. In this class you will learn the benefits of lacto-fermentation and learn firsthand how to start fermenting your own food. There will be a short presentation and then you will get your hands dirty. We will also have some fermented food such as kimchi, sauerkraut, kvass and siracha to sample. Everyone will get to take home a small jar of kimchi and you will also have the skills to start fermenting food at home.
